We started our Shiitake Mushroom Farm using logs cut from our own ground and grown in cedar groves.  We are currently testing six different varieties of Shiitake to see which ones thrive the best in our areas climate.  Our first bloom was this past fall and we are very encouraged for the upcoming season.  We hope to be able to make them available soon at local farmers markets and have already had interest from a major regional restaurant.
